  How to cook Creme brulè with chestnuts :

Heat the cream thelatest vanilla bean in a pan over low heat.
Work in a bowl the egg yolks with the sugar, stir in the purée.
Strain the cream and incorporate the mixture of brown, stirring well.
Spread the mixture into the appropriate ramekins for creme brule, then place on a baking sheet.
Pour into the pan of hot water for cooking in a water bath (mettetene enough for you to get to cover about half the height of the ramekins).
Cook the creme brule in a preheated oven at 150 degrees for about 45-60 'or until cooked.
The creams will remain shaky and just congealed.
Let them cool and ready to serve, cover with brown sugar and caramellatele with a torch or under the grill.
Sprinkle with pieces of marron glace and melted chocolate in the microwave with a little 'of milk or cream.
